Herby and sparkling and refreshing - a great cocktail at any time of year (perfect for brunch)!

This cocktail is unexpected in about 3 different ways (I don’t really know how many ways, but I’m thinking that’s about right). It’s green, which you don’t see all that often, it’s herby, it’s sparkly, it’s ridiculously aromatic. Ok, that’s 4.

This cocktail brings this phrase to mind: Detox/Retox. Basically if you’re in the mood for a alcoholic drink, but you’re still trying to stay on the healthy side (hello cucumber!), this is a prime candidate for that kind of justification sipping. Of course I also like pairing this with Zucchini Fritti, which is a little harder to justify.

Cucumber in Cocktails

The cool, simple flavor of cucumber is lovely in drinks. You will be using a cucumber in this drink in 2 ways (that I’m sure of). Half of the cucumber is peeled, seeded, roughly chopped and pureed with some herbs and honey to make the refreshing puree that anchors this cocktail. The other half will be sliced as used for garnish, along with additional sprigs of the featured fresh herbs, basil and mint.

How to Make Vodka Prosecco Cocktail

Cut the cucumber in half. Slice one half into circles and set aside in the refrigerator. Peel the other half, slice in half lengthwise, scrape out the seeds, and cut into chunks. Place the chunks of cucumber, mint, basil, and honey in a food processor or blender, add the vodka and blend until as smooth as possible; let the motor run for at least 30 seconds. Refrigerate the puree for at least 1 hour, until chilled.

Pour in the chilled puree into a pitcher.

Then pour in the prosecco.

Serve in the glass of your choice over ice, with the cucumber slices and additional sprigs of fresh herbs for garnish.

Equipment

Ingredients 

  • 1 medium seedless cucumber
  • 2 tablespoons roughly chopped fresh mint leaves
  • 1 tablespoon roughly chopped fresh basil leaves
  • 2 tablespoons honey
  • 1 cup vodka , chilled
  • 1 bottle prosecco , chilled
  • Small sprigs of mint and/or basil to garnish

Instructions 

  • Cut the cucumber in half. Slice one half into circles and set aside in the refrigerator. Peel the other half, slice in half lengthwise, scrape out the seeds, and cut into chunks.
