This Vodka Prosecco Cocktail is a simple, elegant bubbly drink that fuses the crisp sparkle of Prosecco with the smooth kick of vodka. It’s light, refreshing, and easy to make, featuring cucumbers, fresh mint and basil, and a touch of sweetness. Perfect for parties, brunches, or a chill night with friends.

This bubbly cocktail pairs crisp, effervescent Prosecco with a splash of smooth vodka plus cucumber and a little flurry of herbs. Vodka Prosecco Cocktail is a sparkling little festival in a glass, and it’s ready in under 10 minutes! It tastes sophisticated, looks fancy, but it’s really, really easy to make.

This sparkling cocktail is perfect to serve with appetizers or brunch.

Cucumber in Cocktails

The cool, simple flavor of cucumber is lovely in drinks. You will be using a cucumber in this drink in 2 ways (that I’m sure of). Half of the cucumber is peeled, seeded, roughly chopped, and pureed with some herbs and honey to make the refreshing puree that anchors the cocktail. The other half will be sliced and used for garnish, along with additional sprigs of the featured fresh herbs, basil and mint.

Ingredients

  • Cucumber – Choose a seedless cucumber (sometimes called Persian cucumbers), or go with mini cucumbers, which are easy to cut up for the garnish.
  • Fresh mint and basil – These two herbs are a great complement to the cucumber. Save some for the garnish.
  • Honey – For just a touch of sweetness.
  • Vodka – Choose your favorite — it doesn’t have to be top-shelf, either. For a subtle twist, use a citrus vodka.
  • Prosecco – The sparkling wine counterpart to Champagne, Prosecco is often cheaper and a great choice for cocktails.

It’s best to chill both the vodka and the wine before mixing these drinks.

How to Make a Vodka Prosecco Cocktail

  1. Make the cucumber vodka blend: Cut the cucumber in half. Slice one half into circles and set aside in the refrigerator. Peel the other half, slice it in half lengthwise, scrape out the seeds, and cut it into chunks. Place the chunks of cucumber, mint, basil, and honey in a food processor or blender, add the vodka, and blend until as smooth as possible; let the motor run for at least 30 seconds. Refrigerate the puree for at least 1 hour, until chilled.
  2. Fill the pitcher: Pour the chilled puree into a pitcher, then pour in the Prosecco.

  1. Serve: Pour into the glasses of your choice over ice, with the cucumber slices and additional sprigs of fresh herbs for garnish.

An Herbaceous Cocktail

This cocktail is unexpected in about 3 different ways (I don’t really know how many ways, but I’m thinking that’s about right). It’s green, which you don’t see all that often; it’s herby, it’s sparkly, it’s ridiculously aromatic. Ok, that’s 4.

This vodka Prosecco drink brings this phrase to mind: Detox/Retox. Basically, if you’re in the mood for an alcoholic drink, but you’re still trying to stay on the healthy side (hello, cucumber!), this recipe is a prime candidate for that kind of justification sipping. Of course, I also like pairing this with Zucchini Fritti, which is a little harder to justify.
