Recipes with cubed chicken cook up quickly, making them great candidates for fast weeknight dinners. Some of these recipes start with uncooked cubed chicken, some with cooked cubed chicken. There are stir-fries, sautés, pasta dishes, stews, salads, and soups to choose from.

For the recipes that call for cooked chicken, you can use rotisserie chicken as a shortcut, or cook up some simple chicken breasts and cube them. Shredded cooked chicken can be subbed in for cubed cooked chicken, though it will change the recipe in appearance and texture.
