While you can buy seasoned flour at the grocery store, it is so easy — and takes about 2 minutes — to make your own. Plus, the seasonings will be fresher. At its most basic, seasoned flour is nothing more than flour with salt and pepper added. However, you can add your own blend of seasonings and keep changing things up, depending on how you’re using the seasoned flour and what other flavors are in your recipe.

Seasoned flour is used in all sorts of cooking applications and basically ensures the food is seasoned at the same time as it is given a light coating of flour. The flour encourages the browning and caramelization of whatever food you are cooking. You may see recipes call for “dredging” something in seasoned flour — that simply means rolling or pressing the food into the flour to coat it thoroughly. Often, the recipe will direct the cook to tap off the excess flour back into the bowl.

Seasoned flour often appears as an ingredient in recipes for fried chicken, chicken cutlets, pork chops, fried fish, chicken fried steak, and more. It is also used as a base for gravies and sauces, often combined with some melted fat and tasted to create a roux, which will thicken the gravy or sauce.

Ingredients

  • All-purpose flour – If there is a gluten allergy or intolerance in the house, you can use gluten-free flour.
  • Kosher salt – I prefer kosher salt when cooking, but if you decide to use table salt reduce the amount to 1 teaspoon for every cup of flour.
  • Ground black pepper – Freshly ground makes a big difference.

Seasoned flour may also be the first step when making breaded chicken (whether cutlets, full-sized breasts, or other chicken pieces) and other meats. After the flour, the recipe will likely have you dip the meat into eggs and then breadcrumbs before cooking.

Variations

Add 1/2 to 1 teaspoon of the following seasonings to the flour:

  • Cayenne pepper
  • Paprika
  • Onion powder 
  • Garlic Powder

How to Make Seasoned Flour

  1. Combine the flour and seasonings: Place the flour in a shallow bowl. Add the salt and pepper and any additional seasonings you like. Stir until everything is well blended.

  1. Dredge the protein or item of your choice in the flour: Roll or press the food into the flour to coat it thoroughly. Tongs can be helpful, or use your hands. Tap to remove any excess flour from the food. Prepare (such as sautéing, browning, or frying) according to the recipe.

How to Use Seasoned Flour 

Seasoned flour can be used to make fried chicken, chicken cutlets, pork chops, fried fish, chicken fried steak, and many more easy dishes. It is also used as a base for gravies and sauces, often combined with some melted fat and tasted to create a roux, which will thicken the gravy or sauce.

Excess seasoned flour that has not been touched by raw foods can be stored in an airtight container for up to a month. While it is easy to make, mixing up a bit extra and storing it in the cupboard could save you time later! Just be sure to label it with the seasonings you added.
