The 13 Sheet Pan Dinners That Save Me When I’m Down to My Last Ounce of Energy

There are plenty of nights when I am very clear with myself: I have exactly one pan’s worth of dishes in me. That’s when I reach for my trusty, slightly warped sheet pans and start plotting dinner. I love the way everything can roast side by side — protein, veggies, sometimes even the starch — edges getting caramelized, the kitchen smelling cozy, and the dishwasher getting the night off.
In cooler weather, especially, I roast a big sheet pan of something at least once a week, often twice. Sometimes it’s a full-on one-pan supper; sometimes it’s a simple sheet pan of crispy potatoes or sweet potatoes or roasted vegetables that magically turn leftover protein into a real meal.
Here are the sheetpan dinners (and sheetpan heroes) I come back to again and again when I want lots of payoff with very little effort. Think burnished salmon, tender chicken thighs over potatoes, pork with jammy roasted vegetables, and a ridiculously crispy eggplant Parm that never goes soggy.
