Creamy Avocado Dressing

This thick avocado salad dressing gets a nice punch from mint, cilantro, and lime. It will turn any salad into a better version of itself!

This creamy — but amazingly dairy-free! — dressing has a soft flavor, a lovely pale green color, and all kinds of wonderful uses. Of course, this is great tossed with any assortment of greens for a quick salad, but it would also make a nice dip for anything from crudite to asparagus spears to oven-baked fish sticks. I also love this drizzled over a Cobb Salad or dolloped on a grain bowl. It’s also great on fish tacos.

If you have not used fresh mint in savory recipes, your life may be about to bust wide open. In Southeast Asian cooking, mint is used all the time, often in combination with other herbs like basil or cilantro. I borrowed a page from these herb-forward combos and decided to translate them into a creamy avocado salad dressing recipe that has just a touch of sweetness from the honey.

Ingredients

  • Fresh mint leaves – For bright, fresh, and cool flavors.
  • Fresh cilantro leaves – Adds fresh and slightly peppery notes. If you don’t like cilantro, you can use parsley.
  • Fresh lime juice – Just a touch of acidity and brightness. You can use lemon juice instead.
  • Olive oil – For a creamy texture and balanced flavor.
  • Honey – For a touch of sweetness. Use agave for a vegan version of this dressing.
  • Salt and black pepper – To taste.
  • Hass avocado – Make sure to use a perfectly ripe avocado. Beyond the delicious avocado flavor, it adds a nice creaminess to the dressing without any dairy.

How to Make Creamy Avocado Dressing

  1. Combine the herbs and liquids: In a blender or food processor, combine the mint, cilantro, lime juice, olive oil, and honey. Add the salt and pepper, and process until blended.

  1. Finish blending: Add the avocado and blend until it reaches a smooth and creamy consistency.

  1. Serve: Add the dressing to a salad or use it as a sauce on another dish. (Note how well-tossed this spinach salad is; the dressing really covers everything in a light coating.)

Tips and Variations

  • This makes a very thick dressing, so start adding it to your salad judiciously and toss well so that it is evenly distributed amongst the lettuce and vegetables.
  • If you use a blender it will probably be a bit thicker than if you use a food processor, as more air gets incorporated into the dressing.

Storage

Creamy avocado dressing will last in the fridge in a sealed, airtight container for up to 3 days. The color may become less bright. Give it a good stir or shake before serving.
