Preheat the oven to 375F. In a small bowl, combine the olive oil, vegan Parmesan, garlic, parsley, and salt.
Halve the baguette crosswise, then slice each one in half horizontally lengthwise. Place the bread cut side up on a large baking sheet.
Spread the garlic mixture on the baguette halves and bake until golden and crusty along the edges, about 15 minutes. Serve hot or warm.
Notes
Many of the vegan parms out there are based on nutritional yeast, cashews, and/or seeds. They are not a perfect substitute for authentic Parmesan cheese, but a good option if you’re looking for the crumbly, nutty, sharp flavor and consistency. Some seem to perform better during cooking than using them straight up in salads and for sprinkling and such.
