1poundpizza dough(you can use whatever type of packaged pizza dough works for you)
½poundground beef
½cupchopped onion
Kosher salt and pepper(to taste)
Large pinch red pepper flakes (optional)
¼poundshredded mozzarella
¼poundshredded cheddar
½cupdiced tomatoes
¼cupdiced pickles
Additional red pepper flakes(to serve; optional)
Instructions
Preheat the oven to 425 F. In a small bowl, mix together the mayo, ketchup, and mustard.
Heat a large skillet over medium-high heat. Add the ground beef and cook, stirring to break it up, for about 3 minutes until it starts to brown in spots. Add the onions, season with salt and pepper, the red pepper flakes if using, and continue to cook, stirring frequently, until the meat is completely browned and the onions are fairly tender. Drain the meat and onions in a colander.
Roll or press the pizza dough onto a baking sheet, making a rectangle about 9-by-14 inches. Spread the sauce on the pizza dough rectangle, leaving a ¼-inch border around each edge. Sprinkle half of each cheese evenly over the pizza, also keeping the border. Distribute the beef, tomatoes, and pickles over the cheese. Top everything with the rest of the cheeses.
Bake the pizza for about 20 to 22 minutes, until the cheese is melted and lightly browned, and the crust is lightly browned around the edges and fairly firm on the bottom (lift it gently with a spatula to check). Transfer the pizza to a cutting board and let sit for 2 minutes. Serve hot, with red pepper flakes on the side if desired.
Notes
Make sure to break up the ground beef as you sauté it into very small, sprinkle-able pieces.
After sautéing the beef and onions, pour off any excess fat for the topping doesn't make the pizzas soggy.
I like to sprinkle half of the shredded cheese evenly over the sauce on the pizza, then distribute the toppings over the cheese. And then, top everything with the rest of the cheeses. Cheese on the bottom, cheese on the top.
