2tablespoonsfreshly squeezed and strained lime juice
¼cupginger syrup(or more to taste)
10sprigs fresh mint
1bottleProsecco(Champagne or other dry sparkling white wine)
1cuplemon-lime soda(such as Limonata or Izze)
½cuppomegranate seeds(optional)
Additional small mint sprigs(to serve)
Ice(to serve)
Instructions
Combine the vodka, pomegranate juice, lemon juice, lime juice, ginger syrup, and mint in a pitcher or carafe. Use a muddler or even a big spoon to muddle (crush up) the mint a bit. Refrigerate for 12 to 24 hours.
Pour half of it into another pitcher or carafe if desired (distribute the mint accordingly,) then pour in half of the bottle of Prosecco and half the lemon-lime soda. Add half of the pomegranate seeds if using, stir and serve, pour it in ice-filled glasses. Garnish each glass with a small sprig of mint.
When you are ready to serve the next pitcher, add the remaining Prosecco, soda, and pomegranate seeds (if using) to that one.
Notes
I am a huge fan of the pitcher drink. As much as I love creating cocktails and cooking, I feel like a shmo if I’m locked into prep mode while my guests are milling about. And frankly, it doesn’t make your guests feel all that relaxed either to see you (me) shuffling around incessantly, stirring and shaking, and so forth. Yes, there are some things that have to be done last minute, but the more you can get done ahead of time the better, and that includes the drinks.
