Preheat the oven to 425°F. Peel or scrub the Jerusalem artichokes. Cut the artichokes into half-inch slices. Place them on a rimmed baking sheet.
Drizzle over the olive oil and toss to coat the artichokes. Sprinkle over the salt, and roast them for about 25 minutes until they are golden brown and tender.
