Season the beef with salt and pepper and sprinkle it with the flour. Place a large pot
, or Dutch oven
over medium-high heat, add the oil and heat until it shimmers, and add the meat in a single layer; don't crowd the meat, you may have to brown it in two batches. When it is browned on the bottom, after about 2 minutes, turn it and brown the other side for about 2 minutes (you do not need to brown all sides of the pieces of meat). Transfer the browned meat to a large plate. Pour off all but two tablespoons of any remaining fat in the pan (if there is a bit less, that's fine, too).
