A pretty, sparkling cocktail is simply the nicest way to greet your guests. Especially around the holidays. Picture yourself on the other end of the situation — when you walk into a party and there is a specific drink on offer, don’t you feel like a celebration has really begun? And also, that you should totally try it? This one is a beautiful rose color, fizzy, and filled with the bright flavors of mint, ginger, pomegranate juice and citrus. I can’t think of anything more festive.

Pitcher Cocktail

I am a huge fan of the pitcher drink (please also consider this even deeper red pitcher drink, also very citrusy and pomegranate-ey). As much as I love creating cocktails and cooking, I feel like a shmo if I’m locked into prep mode while my guests are milling about. And frankly it doesn’t make your guests feel all that relaxed either, to see you (me) shuffling around incessantly, stirring and shaking and so forth. Yes, there are some things that have to be done last minute, but the more you can get done ahead of time the better, and that includes the drinks.

Which leads us to the pitcher drink. You may want to use two pitchers or carafes for this amount, unless you have a nice big one. If you use two, make the base, and before you add the sparkling wine, divide the mixture into two pitchers, and refrigerate one. Add the Prosecco and soda right before serving, and pour it over ice as you serve it up, so the ice doesn’t melt and dilute the drink, and it stays effervescent.

So, what’s in this pretty pink drink? Pomegranate juice, which is easily purchased these days. Pom Wonderful is the brand you will most likely see at your supermarket. Leftovers can be mixed with sparkling water for a refreshing nonalcoholic drink all month long. Then some freshly squeezed citrus juices, which can be squeezed a few days ahead, some mint, some sparkling wine (don’t use the super pricey champagne for this, Prosecco or another less expensive sparkling wine is a-ok). Vodka, for a cocktail kick. Some lemon-lime soda. And then some fresh pomegranate seeds for a burst of sweet tart texture.

We had these with oysters once. It was a very good day.

Don’t forget the extra sprigs of mint to garnish. A party cocktail with a garnish? Who’s the boss? You are.

Sparkling Mint Pomegranate Champagne Cocktail

Ingredients 

  • 1 ½ cups vodka
  • ¾ cup pomegranate juice
  • 2 tablespoons freshly squeezed and strained lemon juice
  • 2 tablespoons freshly squeezed and strained lime juice
  • ¼ cup ginger syrup (or more to taste)
  • 10 sprigs fresh mint
  • 1 bottle Prosecco (Champagne or other dry sparkling white wine)
  • 1 cup lemon-lime soda (such as Limonata or Izze)
  • ½ cup pomegranate seeds (optional)
  • Additional small mint sprigs (to serve)
  • Ice (to serve)

Instructions 

  • Combine the vodka, pomegranate juice, lemon juice, lime juice, ginger syrup, and mint in a pitcher or carafe. Use a muddler or even a big spoon to muddle (crush up) the mint a bit. Refrigerate for 12 to 24 hours.
  • Pour half of it into another pitcher or carafe if desired (distribute the mint accordingly,) then pour in half of the bottle of Prosecco and half the lemon-lime soda. Add half of the pomegranate seeds if using, stir and serve, pour it in ice-filled glasses. Garnish each glass with a small sprig of mint.
  • When you are ready to serve the next pitcher, add the remaining Prosecco, soda, and pomegranate seeds (if using) to that one.
